Curried Kohlrabi and Bok Choy

--adapted from Curried Turnips recipe in Vegetarian Times Complete Cookbook.

This is a good one if you are bored with the more traditional soy-sauce and bok choy combos.

  1. 2 tablespoons oil
  2. 2 kohlrabi, topped, peeled and chopped fine or grated
  3. 1 cup bok choy, chopped
  4. 1 bunch scallions
  5. 1 tart apple (such as a MacIntosh), cored and chopped
  6. 2-3 teaspoons curry powder
  7. 1 teaspoon salt
  8. lemon wedges

Heat oil in a large skillet. Add kohlrabi and onions. After 4 minutes, add bok choy, apple, curry powder and salt. Cook until tender, roughly 3 minutes. Squeeze a fresh lemon wedge over dish before serving. Serve hot with additional wedges.
